Cheesy Potato Lorraine


 

Inspired by the classic French savoury Pie "Quiche Lorraine" that conquered many hearts over the world I present you guys today my Cheesy Potato Lorraine. I’ve made this awesome potato version with bacon and leek, eggs and a mix of Swiss Emmental, Holland Gouda and a bit of English Cheddar. It may look like a challenge but honestly it’s so easy to make and really success guaranteed!

Ingredients

  • 6 large potatoes

  • 2 large eggs

  • 1 egg yolk

  • 300 gr grated cheese (I used mozzarella, cheddar and gouda)

  • 50 gr butter

  • 100 ml cooking cream

  • 250 gr bacon cubes

  • ½ leek

  • 1 small onion

  • Pinch of nutmeg

  • Salt and pepper


Equipment

  • 1 Cutting Board

  • 1 Knife

  • 1 Pan

  • Oven

  • Oven tray

  • Cooking pot



Preparation


1. Pre-heat the oven to 170 ºC.


2. Cook the 6 potatoes in a pot with water and a bit of salt until done.


3. Slice 4 potatoes in half and use a spoon to take out the center of the potato, leaving around half a centimeter on the sides and set aside to cool down


4. Use the 2 potatoes left and the pieces you just took out the 4 other potatoes and make mashed potatoes using the egg yolk, butter, salt, pepper and a pinch of nutmeg.


5. Put your mashed in a piping bag and put a 1 cm deep layer on the edge of your half potatoes.


6. Then cook the bacon cubes until slightly brown, when almost done add a small diced onion and let it glaze a bit with the bacon.


7. Slice your leek quiet fine and put in a bowl with the onion and bacon cubes.


8. Beat up your 2 eggs with some salt, pepper and nutmeg and add to the bowl.


9. Finally add the cream and 150gr of the grated cheese and mix it all together.


10. Place this mix in the potato halves and cover with the other 150gr of cheese.


11. Bake for about 25-30 minutes. After taking it out the oven let it set for about 5 minutes and serve straight away.


12. These Potatoes also still delicious to serve cold the day after should you have any leftovers. Enjoy!
