Panna Cotta with Berry Sauce


 

This Panna Cotta with berry sauce is a take on on the classic Italian Panna Cotta, which literally means cooked cream. It’s a milk, cream and gelatin based recipe which can be flavored with a lot of different garnishing's.


I’ve chosen for a milk only based recipe today flavored with a fresh vanilla bean stick and some vanilla sugar topped with a berry sauce. It’s a truly easy recipe that cannot go wrong, only thing to keep in mind is that it needs a few hours to set in the fridge so prepare it in time.


You only need whole milk, sugar, vanilla bean stick, vanilla sugar and gelatin for this recipe.

Ingredients (6 servings)

  • 1 liter of whole milk (divided)

  • 2 bags gelatin from 9 gr (or 12 sheets of gelatin)

  • 1 bag vanilla sugar (8 gr)

  • 1/2 cup sugar

  • 1 vanilla beans stick

  • 2 cups frozen forest fruits

  • 1/2 cup sugar


Equipment

  • 1 Cutting Board

  • 1 Knife

  • 1 Pan

  • 2 Cooking pots


Preparation


1. Take out 12 spoons of milk and mix with the two bags of gelatin, set aside.


2. Slice the vanilla bean stick open and put together with the rest of the milk, the sugar and the vanilla sugar.


3. Heat it up until you reach the boiling point, take it away from the fire and wait for 5 minutes, then add the gelatin mix and let it cool down a bit.


4. Fill up your glasses and put in the fridge to set, this will take around 3 hours, meanwhile don’t stir or move the Panna Cotta.


5. Meanwhile put the frozen berries in another cooking pot and put on a really small fire together with the sugar , when it boils you take it away from to fire and set aside to cool down.


6. I prefer this berries mix being saucy, if you prefer it a bit more solid you can add 1 gelatin sheet to every 100 gr of berries.


7. After 3 hours of setting, put some of the berry sauce on top of the Panna Cotta and enjoy.
