Stuffed Tomatoes with Couscous and Chickpeas


 

So happy with the result of these Stuffed Tomato with Couscous and Chickpeas salad. After some disasters trying to create an vegan amazing dish, it all came together, combining the couscous with the chickpeas to create a full protein was the first step and a little later this stuffed tomato was born. A healthy and easy dish that presents nicely, topped off with some fresh Coriander served on some home-made Hummus. Vegan cooking is a new discovery for me even if I’ve been cooking for years but I love this new challenge in creating these dishes. Hope you’ll enjoy it!

Ingredients

  • 4 medium tomatoes

  • 1 cup couscous

  • 1 clove garlic

  • 1/2 yellow bell pepper

  • 1/2 orange bell pepper

  • 1/2 red onion

  • 1/2 can boiled Chickpeas

  • 1 tbsp agave syrup

  • 1 tbsp apple vinegar

  • 3 tbsp olive oil

  • Salt and pepper

  • 150 gr home-made or bought Hummus


Equipment

  • 1 Cutting Board

  • 1 Knife

  • 2 Bowls

  • Kettle



Preparation


1. First step is to mix the couscous in a bowl with 2 tablespoons of olive oil, 1 diced clove of garlic and some salt and pepper.


2. Add some boiling water to this mix (I always use 1 on 1, meaning 1 cup boiling water on one cup of couscous) and put aside.


3. Dice the bell peppers and the onion into fine cubes, season with some pepper and salt, add the chickpeas, the agave syrup and the apple vinegar and give it a good mix.(Keep a small bit of every ingredient aside to garnish later)


4. Add this mix to the couscous and mix it all together, set aside.


5. Slice the top of your tomatoes off, slice these tops into cubes and add to the couscous mix.


6. Hollow out the tomatoes and stuff them with the couscous mix.


7. Put some Hummus in the center of the plate and use a fork to make a round and place your stuffed tomato in the middle, add some coriander leaves and some of all the ingredients spread over the circle of Hummus as a garnish.


8. Enjoy!
