  • Salmon Toast Tower

    One of my favorite flavors combination in a toast would be salmon and cream cheese or a toast with avocado and tomato, so I had a wild idea and made a toast tower combining all these ingredients in one dish and the salmon toast tower was born. Simply layering all these lovely ingredients and serving with some lemon parts on the side. Ingredients (2 persons) 300 gr smoked salmon 10 cherry tomato 1 avocado 4 slices toast bread 1 lemon Salt & pepper Arugula (optional) 3 tbsp cream cheese 1 small onion Preparation 1. Slice the avocado in cubes, season with salt, pepper and a drop of lemon juice and mash with a fork. 2. Toast your bread. 3. Cut the bread in a triangle as shown below, this way the two outsides match the shape of the one triangle on the inside. 4. Take the middle triangle to start and put a layer of the mashed avocado. 5. Place the two half triangles on top and add a layer of sliced smoked salmon. 6. Again place the two half triangles on top of the salmon. 7. Now use a piping bag to add a layer of cream cheese. 8. Add the last full triangle on top, place a little bit of arugula on the top toast and add some more sliced salmon in the middle. 9. Top of with a bit of cream cheese, some onion rings and optional some fresh dill. 10. Surround the tower with some lemon parts and some half cherry tomatoes. 11.   • Eggplant Parmesan

    Today I bring you this delightful and very simple classic italian recipe that will leave you with cravings for more, it can be used as an appetizer in your meals or parties as well as a side dish. The version I present to you today is a healthier variant of the original one, but I guarantee that taste wise is equally good. Hope you guys enjoy making it! Ingredients 1 eggplant 500 gr tomato passata 1 small onion diced 2 tbsp tomato paste 1 tsp garlic powder 1 tsp oregano 100 gr grated mozzarella cheese 100 gr grated parmesan cheese 1/4 tsp salt pinch of pepper olive oil Equipment small cooking pot square baking mold grill pan Preparation 1. Put the small cooking pot in mid fire and add the olive oil when hot. 2. Then add the onions and let it glaze. 3. Add the tomato passata, the tomato paste, the garlic powder, the oregano, salt and pepper and give it a mix. Let it cook for 45 min in low fire mixing once in a while. 4. Pre-heat the oven to 200 ºC 5. Slice the eggplant in thin longitudinal slices. 6. Grill the eggplant slices in the grill pan to take out the water excess. 7. When both, the tomato sauce and the eggplants are done, is time to build the eggplant parmesan. To do so, grab the baking mold and start with a layer of tomato sauce, then add a layer of eggplant (similar to what you do when building a lasagna), then a layer of mozzarella cheese, followed by a layer of parmesan cheese and repeat one more time. 8.   • Turnip Soup with Truffle

    In this cold winter season I love a good thick and rich soup but as a chef I also like to give a special twist to this comforting bowls. So this Turnip soup is always flavored with some truffle before hitting the table at home. The aroma from the truffle blends so well with the earth taste of the turnips and the potatoes that are the base of this amazing soup. It's a super easy recipe which can't go wrong and with the truffle you'll surprise your guests time after time. The basic ingredients are onion, leek, turnips, veggie stock, salt and pepper and just before serving you hit it with some truffle paste or white truffle oil. Ingredients 500 gr turnips 2 large potatoes 1 leek (only use the white part) 2 onions 2 liter veggie or chicken stock Truffle paste or oil Salt and pepper 1 tbsp butter Equipment Cutting board Cooking pot Preparation: 1. First wash and peel all your veggies and chop them up in chunks. 2. Put some butter in your cooking pot, add all the veggies and stir fry them on a low fire until they are glazed. 3. Add salt and pepper and the stock. Cook for about 30 minutes. 4. Blend the soup, let it cook for 5 more minutes and blend again. Blending it twice will get a smoother and better binding of your soup. 5. Taste and if needed season with salt and pepper. 6. Just before serving add a tea spoon of truffle paste or a tsp of white truffle oil. 7. Serve with some roasted bread for the ultimate taste experience.   • Bolognese Sauce

    A spaghetti Bolognese, the iconic Italian dish in Italian called Ragù alla Bolognese originated in the Italian city Bologna. This pasta conquered the world and is loved by young and old. Through the years I had the privilege to work with some Italian Chefs and they all have their own recipe so today want to share with you guys my personal recipe a version that is a result of mixing some of those recipes into my master piece. Is this the best Bolognese ever? Well, no cause my Grandma's was the best but I'm aiming for silver here today. Serve the sauce with a pasta you like and some bread and Parmesan cheese. Same sauce is used to make a Lasagna Alla Bolognese which we will take on in the coming weeks. Hope you'll try my recipe out some day and let me know how it was. Enjoy! Ingredients 500 gr ground beef 500 gr mixed ground pork and veal 2 onions 1 carrots 1 sweet bell pepper 2 tsp basil 1 tsp oregano 1 tsp italian seasoning 1/2 tsp curry 4 tsp tomato paste 500 ml passata (sieved tomatoes) 2 tbsp olive oil 2 tsp salt pepper to taste pinch of chili 2 cloves garlic Equipment 1 large cooking pot cutting board knife Preparation 1. Peel and chop the onions and the carrot in fine cubes and dice the sweet bell pepper. 2. Put some olive oil in your cooking pot, add the onion, carrot and sweet pepper. Stir fry on low fire until the onion is glazed. 3. Add the beef and the garlic fine cut. 4. Add the basil, oregano, italian seasoning, curry, salt and pepper, pinch of chili and stir fry until your beef is done and broken into little pieces. 5. Add the tomato paste and stir fry for 3 more minutes, then add the passata and leave it cooking on a really small fire for at least 30 minutes, flavor and structure will be better if you cooked for 2 hours (if doing this add 200 ml water).     This Sweet Potato Fries with a curry beetroot and tomato sauce recipe is 100% vegan and 200% tasty. Starting out with cooked beetroot and tomato sauce and kept adding spices to lift up the beetroot and tomato salsa to a combination specially by adding curry that goes amazingly well with the sweet and crunchy taste of the sweet potato fries. Ingredients for the fries Sweet potatoes Sunflower oil Ingredients for the homemade tomato sauce 3 tbsp tomato paste 1 clove garlic 1 small onion Oregano Salt Pepper 1 tsp Paprika powder Pinch of chili 1 tsp Agave syrup 1 tsp apple vinegar 1 tsp Olive oil 4 tbsp water Ingredients for the curry beetroot sauce 1,5 cooked beetroot 1/2 cup homemade tomato sauce 1 tbsp pasata 1/4 tsp salt 1 tsp curry 1 tsp garlic powder Pinch pepper Preparation for the fries 1. Wash and or peel the sweet potato, you can eat the skin so you don't need to peel it. Cut them into long fries, about 1 cm thick. 2. Heat up the sunflower oil to around 160 degrees. Fry the sweet potato fries until they start coloring a bit brown and feel crisp on the outside and soft on the inside. 3. Season with some sea salt and serve hot. Preparation for the homemade tomato sauce 1. Heat up the olive oil in a small cooking pot and glaze the onions, add the garlic. 2. Then add first the apple vinegar, next the tomato paste, 4 tbsp of water, the oregano, the chili and the paprika powder. 3. Cook up for a minute. Mix it really well and add a tiny bit of Agave syrup to give it a bit of a sweet and sour twist. 4. Serve all 3 recipes together and I promise it's the perfect snack & dip for any occasion. Preparation for the curry beetroot sauce 1. Simply put all ingredients together and mix it till you get a nice saucy structure. 2. Cook in low fire for 20 min for the flavors to mix better. 3.     Hummus! These days everywhere in the world you can find this awesome treat, and a fun fact, the word Hummus actually means Chickpea in Arabic. In the beginning I always thought it was a Moroccan dish cause I first discovered it in a Moroccan restaurant years ago but recently I found out the origin is not totally sure cause it's made in Arabic countries for years but the first mentions of Hummus were found in Egypt going back to the 13th century. It's a so easy to make 5 min craft and I find it a lot more tasty as the bought versions in the supermarket so today I wanted to share my recipe with you guys. All you need is a blender or a high bowl and a mixer. Canned chickpeas, garlic, tahini (sesame paste), olive oil, salt and pepper and a drop of lemon juice. Perfect to serve with roasted bread, crackers, veggies or as I like it, with some crunchy falafel. Ingredients: 1 cloves garlic 2 tbsp tahini 150 ml olive oil 1 1/2 cup canned chickpeas Pepper Salt 1 tsp lemon juice Equipment Blender Preparation 1. Put the canned chickpeas in a sieve and get rid of the liquid. 2. Put the chickpeas in the blender, add the garlic, olive oil, salt, pepper, tahini, lemon juice and season with salt and pepper. 3. Mix or blend until you reach a smooth consistency. 4. Taste and if needed season with more salt and pepper or lemon juice to taste. 5. Serve in a bowl and enjoy. 6.     What is better than bacon and eggs for a hangover breakfast? Well, this Hangover Breakfast 2.0 is. A super easy egg and bacon rolls pie to defeat any hangover bothering you, and you'll have 55 minutes oven time sipping coffee as a excuse for doing nothing and let your braincells try to fall back into place. I used a pre packed quiche dough, put it in my cake mold, added rolled bacon stripes, thrown in 9 whole medium eggs, some salt and pepper on top and simply put in the oven for 55 minutes. Ingredients 1 roll pre-made quiche pastry 200 gr bacon slices 9 eggs Salt and pepper Butter for the mold Equipment Oven Cake mold (15 cm) Fry pan Preparation 1. Pre-heat the oven to 180 ºC 2. Fry the slices of bacon till they are almost done but not crispy. 3. Butter your cake mold and place the pre-made quiche pastry inside, keeping a 5 cm high border. 4. Roll up the fried bacon slices and put in your cake mold. 5. Once they are all set up in the cake mold just start cracking the eggs one by one putting them between and on top of your bacon rolls (I used 9 but depending on the size you might need 8 or even 10) just make sure the bacon rolls are totally covered. 6. Place into the oven for about 55 minutes. 7. Unmold and serve hot.   • Boston Cream Pie

    Oh God, it is the first time I make this cake as someone challenged me to, I must admit that it is an awesome cake, the soft sponge of this cake with that incredible pastry cream in the middle and the flavor of that black chocolate ganache is really a trick, maybe by reading the recipe you will see a lot of steps, but I can assure you it is totally worthy. Ingredients: Cake 4 tbsp butter 2/3 cup sugar 1 cup all-purpose flour 1 tsp baking powder 1/8 teaspoon salt 2 large eggs 1/3 cup milk Cream Filling 2 egg yolks 1 1/2 cups milk 1/3 cup granulated sugar 2 tbsp cornstarch 1/8 tsp salt 2 tsp vanilla Chocolate Ganache 60 ml heavy cream 100 gr dark chocolate 1 tbsp butter Preparation: 1. For the Cake, pre-heat the oven to 180º C 2. Butter and flour a 18 cm baking mold. 3. Whisk together the dry ingredients and set aside. 4. Combine milk and butter in a small pan and set over very low heat until boil. 5. Beat the eggs and the sugar with an electric mixer on high speed, until thickened and whitened and then add the dry ingredients little by little. 6. Lower the speed to medium and add the vanilla and the hot milk with butter and mix for around five minutes, then pour the mix on the mold and bake for 40 minutes or until a toothpick inserted in the center comes out clean. 7. Take out of the oven, let it set for 10 minutes, unmold and let it cool in a metal rack. 8. For the filling, while the cake is cooling down, beat the egg yolks with a fork or wire whisk until mixed and stir in 1 1/2 cups milk, set aside. 9. Mix the 1/3 cup granulated sugar, the cornstarch and 1/8 teaspoon on a bowl. 10. Gradually stir egg and milk into sugar mix. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 2 minute; remove from heat. 11. Add the vanilla and whisk. Press plastic wrap on surface of filling to prevent a tough layer from forming on top. Refrigerate at least 2 hours. 12. When the filling is cool down, cut in half your cake to create two levels and place all the pastry cream between the layers. 13. Now is time for the chocolate ganache, in a small pan, put the 60 ml of heavy cream and bring to boil in medium fire, when boiling, take out of the fire and add the chocolate and the butter and keep mixing until the chocolate is totally melted, when done, let the ganache rest for 15 minutes and then put it on top of your cake making sure that some of the ganache comes dropping from the top. 14.     What is not to like if you combine two awesome things like pancakes and pumpkin. And there we are, the Savory Pumpkin Pancakes are born. The sweet natural taste and the smooth texture of a cooked pumpkin leans itself perfect to be used for making a delicious pancake dough. Cook them golden brown with a small amount of sunflower oil in a pan and serve warm. They are delicious, soft, sweet and a bit healthier than a classic pancake. Hope you'll like this recipe and try them out some day. Ingredients: 300 gr pumpkin puree 1 cup all-purpose flour 1/4 cup milk 3 eggs 125 gr bacon cubes 200 gr feta cheese 50 gr spring onions 1/2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt pinch of pepper Preparation 1. Chop the spring onions really fine. 2. Crumble the feta cheese in small crumbs. 3. In a pan, cook the bacon until golden, add the spring onions and let it glaze for 1 minute. Take aside and let in cool down. 4. In a large bowl mix the pumpkin pure, the milk and the eggs and whisk until mixed. 5. Add the flour little by little while mixing and finally add the baking powder, the baking soda, the salt and the pinch of pepper and mix well 6. Then, add the bacon cooked with the spring onions and the feta cheese crumbles and mix everything together. Let it rest for 10 minutes. 7. Take a non-stick pan to medium fire and put a bit of sunflower oil, pour the mix in the pan forming 10 com diameter pancakes and let it cook for 2 minutes each side. 8.     What a better way to start the last day of this 2020, a year that has been full of downs and new world experiences led by a huge pandemic, but you know what? today and now I'm just focusing on the delicious cinnamon smell mixed with the hot Nutella scent which makes me want to believe that the year starting tomorrow is going to be better, and that hopefully we can leave behind this nightmare that covid19 has brought into our lives, I also hope that we learn from this 2020 that is about to end, and have more time to family, friends and simply live and enjoy, because life passes by and if one lesson I learnt this year is not to take anything for granted. Ingredients: 6 slices sandwich bread 6 tbsp Nutella 2 eggs 60 ml milk 1 tsp vanilla 1 tsp cinnamon oil Equipment: 1 bowl 1 fried pan Preparation: 1. Whisk the eggs, the milk, the vanilla and the cinnamon in a bowl 2. Put the pan in the fire on medium and put a bit of oil. 3. Make 3 sandwiches of Nutella, filling each one with 2 Nutella tbsp inside, and once the sandwich is closed, soaked really good in the egg mix. 4. Cook the french toasts in the pan for 1,5 minutes per side. 5. Breakfast is ready to serve.   • Panna Cotta with Berry Sauce

    This Panna Cotta with berry sauce is a take on on the classic Italian Panna Cotta, which literally means cooked cream. It’s a milk, cream and gelatin based recipe which can be flavored with a lot of different garnishing's. I’ve chosen for a milk only based recipe today flavored with a fresh vanilla bean stick and some vanilla sugar topped with a berry sauce. It’s a truly easy recipe that cannot go wrong, only thing to keep in mind is that it needs a few hours to set in the fridge so prepare it in time. You only need whole milk, sugar, vanilla bean stick, vanilla sugar and gelatin for this recipe. Hope you’ll try it out enjoy it! Stay safe and stay healthy my friends! Ingredients (6 servings) 1 liter of whole milk (divided) 2 bags gelatin from 9 gr (or 12 sheets of gelatin) 1 bag vanilla sugar (8 gr) 1/2 cup sugar 1 vanilla beans stick 2 cups frozen forest fruits 1/2 cup sugar Equipment 1 Cutting Board 1 Knife 1 Pan 2 Cooking pots Preparation 1. Take out 12 spoons of milk and mix with the two bags of gelatin, set aside. 2. Slice the vanilla bean stick open and put together with the rest of the milk, the sugar and the vanilla sugar. 3. Heat it up until you reach the boiling point, take it away from the fire and wait for 5 minutes, then add the gelatin mix and let it cool down a bit. 4. Fill up your glasses and put in the fridge to set, this will take around 3 hours, meanwhile don’t stir or move the Panna Cotta. 5. Meanwhile put the frozen berries in another cooking pot and put on a really small fire together with the sugar , when it boils you take it away from to fire and set aside to cool down. 6. I prefer this berries mix being saucy, if you prefer it a bit more solid you can add 1 gelatin sheet to every 100 gr of berries. 7.   • Puff Pastry Surprise Cupcakes

    Sharing these savory Puff Pastry Surprise Cupcakes during the Christmas holidays cause it’s one of the snacks I love to prepare for New years eve, it’s fast, easy, tasty, easily prepared in advance and most important it goes great with a glass of champagne, wine or beer. I always make this threesome cause their flavors are loved by most people and if you leave out the bacon you even have vegetarian snacks. Excluding the baking time you can make this guys in less than 15 minutes and you can proudly present a self-made treat to yourself and your guests. Ingredients 1 roll pre made puff pastry 100 gr goat cheese 50 gr small bacon cubes or ham Handful blueberries 100 gr mozzarella 2 tsp pesto 3 sundried tomatoes 100 gr ricotta 60 gr cooked spinach Salt and pepper Equipment Oven Cupcake mold 12 pieces Cutting board Preparation 1. Pre-heat the oven to 200 ºC. 2. For the Italian style filling, chop up the mozzarella and the sundried tomatoes, put it in a small bowl, add the pesto, some pepper and mix. Put aside. 3. For the fruity filling, soften up a bit the goat cheese and mix in the bacon or ham cubes and the blueberries. Put aside. 4. For the ricotta filling, season the spinach with salt and pepper, add the ricotta and mix. Put aside. 5. Now slice squares out of your puff pastry according to the size of your cupcake mold (I always advice to test one so you can adjust if needed before cutting the others(, normally 1 sheet puff pastry will do for 12 cupcakes. 6. Butter the mold and place all puff pastry in the mold, keeping the edges opened. 7. Fill 4 with the ricotta mix, 4 with the Italian mix and 4 with the goat cheese mix. 8. Close the puff pastry bringing all corners to the inside. 9. Bake for about 35-40 minutes, until golden. TIP: The cheeses will tend to expand a bit, don't worry its normal and they will shrink in again when taking them out of the oven. 10. Give them 5 minutes to set and unmold. 11. Serve them hot or cold. Enjoy!
